Rosemary & Garlic Lamb Skewers Recipe

Ingredients

  • 600g Lamb Leg or Shoulder: Diced into 1-inch chunks
  • 2 tbsp Olive Oil: To keep it moist on the BBQ
  • 2 Cloves of Garlic: Minced or finely chopped
  • 1 Lemon: You’ll need the zest and half the juice
  • Fresh Rosemary: 2 sprigs, finely chopped (or 1 tsp dried)
  • Salt & Black Pepper: To taste
  • Optional: Red onion or bell pepper chunks to thread between the meat.

Method

  1. The Marinade: In a bowl (or a reusable freezer bag to save on washing up!), mix the olive oil, garlic, lemon zest, lemon juice, and chopped rosemary.

  1. Prep the Meat: Toss the lamb chunks into the marinade and stir well. If you have time, let it sit for at least 30 minutes. If you’re hungry, even 10 minutes will help.

  1. The Skewers: Thread the lamb onto metal skewers. If using wooden skewers, soak them in water for 20 minutes beforehand so they don’t catch fire.

  1. The BBQ: Place the skewers over a medium-high heat.

  1. Cook: BBQ or grill for about 3–4 minutes per side.

  1. Rest: Let the skewers rest on a plate for 5 minutes before eating. This keeps the meat tender and juicy.
A Dad in knee length shorts looks down at the BBQ where he is cooking. His daughter is approaching him to see how the meal is coming on. Serving Suggestion:

Serve with warm artisan bread – we recommend the beautiful artisan loaves from Mueller & O’Connell Bakery in nearby Abbeyleix – along with a dollop of Greek yogurt, chopped mint and a fresh green salad.

It’s a relaxed, fuss-free BBQ dinner that still feels special enough for Easter Sunday.

And of course, no evening at the glampsite is complete without s’mores by the campfire.

How long should I cook lamb skewers on the BBQ?

Cook the skewers over medium-high heat for 3–4 minutes per side. For medium-rare, aim for an internal temperature of 63°C. For well done, cook to 71°C.

Can I prepare lamb skewers in advance?

Yes. You can marinate the lamb up to 24 hours in advance and store it in the fridge. This makes it ideal for an easy Easter BBQ during a family break.

Can I cook these lamb skewers without a BBQ?

Yes. If you don’t have access to a BBQ, you can cook the skewers under a grill or on a hot griddle pan. Cooking times remain similar — just ensure the lamb reaches your preferred internal temperature.
